Kombucha

HatiSoma Kombucha, Original Batch — lightly tart, gently sweet, and alive with culture. Brewed by hand in small batches in Dallas–Allen, TX, with nothing but tea, sugar, time, and patience. This is the first 140 bottles. The next batch will be just as small.

Price range: $4.00 through $27.00

Every bottle of HatiSoma starts the same way it always has — a SCOBY, black tea, cane sugar, and time. No shortcuts, no concentrate, no rushing the culture along. This first batch was brewed by hand in the back of a family shop, bottled one at a time, and set aside to become what it needed to become.

The result is lightly tart, gently sweet, with a subtle natural effervescence — kombucha that tastes like it was made by someone who cares whether it’s good, not just whether it sells. What people notice first, they tell Ami, is that it doesn’t taste like it’s trying to sell them anything.

This is a small release on purpose. 140 bottles, watched and tasted by hand through every stage of the ferment. Keep it refrigerated, drink it within three weeks of your batch date, and expect the next batch — a little different, brewed with the same patience — before too long.

Frequently asked questions

What's actually in the bottle?

Filtered water, organic black tea, cane sugar, and a live kombucha culture (SCOBY) — that's it. No flavor concentrates, no added preservatives, nothing to make it shelf-stable longer than it naturally is. What you're tasting is the fermentation itself, not an ingredient list working around it.

How fresh is it, and how long will it keep?

This batch was brewed and bottled by hand just before it's listed, not sitting in a warehouse. Keep it refrigerated and it's best within three weeks of your batch date — kombucha is a living product, so it keeps changing (a little more tart) the longer it sits, rather than going "bad."

Can I skip shipping and pick it up locally?

Yes — if you're in the Dallas–Allen area, choose local pickup at checkout instead of shipping. You'll get a pickup time by email, and it's the fastest way to get a bottle in your hands while it's at its best.

What if a bottle doesn't taste right, or it takes a few tries to become a fan?

Reach out within 48 hours of delivery or pickup with a photo if something seems off, and it'll be made right. And if the flavor's just not your usual thing — kombucha can be an acquired taste — that's useful to know too; batch two (hibiscus, ginger) is already brewing.
